Blue Oyster

Personality: Grey Dove Oyster mushrooms (Pleurotus ostreatus) are a highly prolific strain of Blue Oyster. They are slow growers,, but boast a thick, shell cap in a mesmerizing blue-grey tint. 

Benefits: Like their fellow oysters, Blues are rich in antioxidants, vitamins, and minerals to support whole-system human function. Some Blue Oyster devotees also testify that it’s a powerful aphrodisiac!

Prepare: Cut off “scab” where mushroom was plucked. Rinse before consuming.

Serve: Take advantage of oysters’ tendency to soak up whatever flavors they’re cooked in. Popular Blue Oyster dishes are risotto, stir-fry, paired with eggs & avocado, or smothered in gravy w/ steak.
