King trumpet mushrooms (pleurotus eryngii) are the largest variety in the oyster mushroom genus, recognized for their thick, firm, white stems and tender, brown, crown-like caps. These mushrooms have a dense, meaty texture and develop a savory umami flavor when cooked, often described as reminiscent of seafood like scallops, abalone, or calamari.
